Lemon Sugar Cookies
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- Zest of 2 large lemons
- 1 1/2 cups granulated sugar
- 1 cup unsalted butter at room temperature
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 tablespoons fresh lemon juice
- Additional sugar for rolling
Preheat oven to 350 F. Prepare some cookie sheets with silicone mats.
Whisk together the flour, baking soda, baking powder, and salt. Set aside.
Beat the butter, sugar, and lemon zest until creamy.
Add the eggs, vanilla, and lemon juice, beat again. Mix in the dry ingredients until just combined.
Roll walnut-sized balls of the dough in sugar and place spaced well apart on the prepared sheets.
Bake until just golden on the bottom, about 8-10 minutes (rotate trays at 5 minutes).
Remove and let sit for a few minutes before cooling completely on wire racks.
These cookies have powerful lemon flavor, but a delicate texture. The recipe halves well.
